Derval is one of Cork’s finest exports and one of Ireland’s most decorated athletes with 5 major international medals to her name as a world class hurdler.
The 36 year old from Douglas studied in UCD before going on to complete a Master’s in Business Management in Smurfit Business School.
Derval completed a cookery certificate course in Dublin Cookery School and presents a food and fitness workshop in Ballymaloe Cookery School three times a year.
Derval is one of a small group of Irish athletes to have competed at three Olympic Games, as she represented Ireland in Athens, Beijing and London.
She is also in a very elite group of Irish world champions. Derval was World Indoor Champion in 2006 as she kicked off her career. She went on to add 2 European Championship outdoor medals and 2 European Indoor Championships medals to this over her career.
After her retirement Derval set about educating the Irish public on how to eat healthy, tasty and simple food with her first book Food for the Fast Lane. It went on to become a number one best seller. She followed this up with the equally successful “The Fit Foodie”.
Derval lives in Cork with her husband Peter and their 2 year old daughter Dafne.
